Ingredients
- 200g plain yogurt
- 2 tbsp mustard
- 2 tbsp honey
- 2 tbsp finely chopped spring onion
- 1.5 tbsp white vinegar
- 1 tsp sugar or to taste
- 1.5 tsp granulated chicken stock (optional)
- 1.5 tsp ground white pepper
Salad,
- 4 cups mixed greens
- 2 cups shredded roast chicken meat
- 1 carrot, shredded
- 8 cherry tomatoes, halved
- 1 green pepper, sliced
- 1 red pepper, sliced
Method
- Mix ingredients for dressing well and set aside
- in another bowl, combine the salad ingredients
- add dressing, toss well and serve immediately
